Directions

1. Combine vinegar, garlic, black pepper, mustard, miso, lemon juice + zest, egg yolks, and cherry juice concentrate in a deep bowl / Cambro.

2. Blend together with an immersion blender until smooth.

3. Continue blending constantly while slowly drizzling in avocado oil. Dressing should thicken and emulsify. Season with Kosher salt to taste.

4. Alternatively, make a full batch in a large blender, or a half batch in a food processor using the same technique.
