Sam's Red Truck Cherry Vinaigrette

Ingredients

16oz Red Truck Orchards Cherry Vinegar

2 cloves garlic
-
1 tbsp black pepper
-
2 tbsp Dijon mustard

1/4 cup white miso

Juice + zest of 1 lemon

4 egg yolks
-
1/4 cup cherry juice concentrate

16oz avocado oil
-
Kosher salt to taste
Directions
Combine vinegar, garlic, black pepper, mustard, miso, lemon juice + zest, egg yolks, and cherry juice concentrate in a deep bowl / Cambro.
Blend together with an immersion blender until smooth.
Continue blending constantly while slowly drizzling in avocado oil. Dressing should thicken and emulsify. Season with Kosher salt to taste.
Alternatively, make a full batch in a large blender, or a half batch in a food processor using the same technique.
