Strawberry and Spinach Salad with Cherry Honey Vinaigrette

This summer salad is super versatile - any berries can be substituted for strawberries! A great way to use some of the U-Pick raspberries from the Hallstedt Homestead this summer - just saying!
Ingredients
- 1 bunch fresh spinach
- 1 cup fresh strawberries (any berry works here)
- ½ cup crumbled Gorgonzola cheese
- ½ cup raw pecans
- ¼ cup Red Truck Orchards Cherry Vinegar
- 2 tablespoons honey
- ½ cup olive oil
- salt and black pepper to taste
Directions
Combine spinach, berries, Gorgonzola cheese, and pecans in a large bowl.
Stir together balsamic vinegar and honey in a medium bowl; slowly stream in olive oil while whisking continuously. Season with salt and pepper.
Drizzle with dressing just before serving. Enjoy!
